Banana Blueberry Muffins

These soft, delicious, and yummy muffins will have you going in for more!

Yield: about 12 muffins


Ingredients

  • 1 banana
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 1/2 cup almond milk
  • 2 tablespoons cooking oil
  • 1/4 cup blueberries (optional)
  • 1 tablespoon sugar (optional)

Directions:

Preheat the oven to 350º F. Line a muffin tin of 12. Put to the side. Mix together the banana, flour, baking powder, and salt in a medium bowl. Set aside. In a separate bowl, mix the egg, almond milk, and cooking oil. Pour the wet mixture into the dry mixture all at once. Mix until right consistency. (See image below)

Fold in the blueberries. Scoop the batter into the muffin tin filling 3/4 way. (See image below)

Sprinkle a little sugar on top. Bake for 12-15 minutes or until a toothpick comes out clean. Let cool for 10 minutes before serving. Enjoy!
